This kit includes all that is needed (except the fresh ingredients) to prepare sushi at home. Sushi is vinegared rice, not raw
fish. A cook can use any type of topping or filling to prepare sushi (seasoned rice). The kit includes Short Grain Rice, Rice Vinegar, Sushi Vinegar, Nori, Wasabi, Pickled Ginger, Dark Soy Sauce, Bamboo Mat, Bamboo Paddle and the Sushi Chef

Rice Vinegar
Sushi Chef@ Rice Vinegar is much milder than vinegar made from other fruits or grains. Our Rice Vinegar is brewed
slowly and naturally, giving it a milder and more delicate flavor than chemically produced vinegar. No preservatives or
artificial ingredients have been added. Its lightness and sweet aroma make it a welcome addition to salad dressings and
marinades.
Sushi Vinegar
Sushi Chef@ Sushi Vinegar is a specially seasoned rice vinegar that is brewed in a slow and natural process that is
centuries old. When mixed with warm rice, it adds the characteristic sheen and flavor of fine sushi rice. The combination
of the vinegar's mild tartness and the sweetness of sugar makes it a delightfully simple salad dressing.
Dark SOY Sauce
This pungent sauce is one of the cornerstones of Japanese cuisine, lending a distinctive and piquant flavoring to many
foods. Sushi Chef@ Soy Sauce is made from the slow brewing of carefully selected roasted soybeans and wheat. It is one
of the few soy sauces available that is 100% natural. Its flavor is much stronger than other soys and makes a marvelous
base for sauces and marinades.
Reduced Sodium SOY Sauce
A naturally brewed soy sauce produced by a Japanese company famous for a long tradition of making this low salt
seasoning. Once again, it is 100% natural and its authentic flavor and reduced sodium content appeals to the growing
population of sodium conscious consumers. Its mild taste makes it a great seasoning to use "straight" or to add zest to
meat and poultry dishes.
Mirin.
A sweetened rice wine that is an essential ingredient in Japanese cooking. Sushi Chef Mirin is made to our specifications
by a famous Japanese Sake manufacturer. It is made in the traditional method of careful brewing and aging, which results
in a warm, richly flavored cooking sauce. Mirin is used in marinades and dipping sauces, and in such popular dishes as
teriyaki, sukiyaki, and tempura.
Sesame SOY Salad Dressina
This all natural salad dressing is the traditional salad dressing served in the finest Japanese restaurants. It contains
naturally brewed soy sauce, rice vinegar, and a light aromatic sesame oil. The salad dressing is a delicious combination of
sweet and piquant flavors. It is delightful on all types of salads, including chicken and pasta. It is also often used as a
marinade.
Teriyaki Sauce
Sushi Chef@ Teriyaki Sauce is a sweet soy-sauce based glaze that adds a delicious flavor and sheen to grilled, broiled
and pan-fried foods. It contains the highest quality ingredients including naturally brewed soy sauce and rice wine. Baste
chicken, beef or fish with Sushi Chef@ Teriyaki Sauce when grilling or broiling. For pan-frying, add Teriyaki Sauce to the
skillet after sauteing food in oil.
Nori (Toasted Seaweed)
Our seaweed sheets are harvested in a Japanese inlet, whose waters and tides are not too cold or harsh to grow this
flavorful delicate seaweed. Our Nori is usually harvested from the first of several seasonal crops, and therefore the iron
content is high. Nori is eaten without any preparation as a wrapping to sushi, and therefore, Sushi Chefs flavorful, lightquality is essential.
Dried Shiitake Mushrooms
These dried mushrooms are becoming an increasingly common addition to all oriental style cooking. Highly prized for their
aroma, they add a delectable taste to soups and stews, as well as being a fanciful side dish in their own right. Dried
shiitake mushrooms have a much stronger flavor and aroma then fresh shiitake mushrooms, and are therefore preferred
in the preparation of cooked dishes.
Bonito Flakes
Bonito Flakes are air-dried shavings of bonito (a member of the mackerel family). Bonito Flakes have a very strong aroma
and flavor of fish and combined with Konbu (see below), are the components of Dashi, the basic Japanese cooking stock
used in most soups and dipping sauces.
Konbu
Konbu is a form of dried seaweed grown in the deepest, coldest Japanese waters. Konbu adds a light flavor of the ocean
Short Grain Rice
This flavorful Japanese style sticky rice has a mild taste and aroma. It does not fluff like long grain rice, but sticks, making
it ideal for use in sushi. Besides its use in Japanese cuisine, this type of rice is also used in cooking many other types of
dishes including risottos and rice puddings.
Rice Cracker Mix
Sushi Chef@ Rice Cracker Mix is a delicious savory snack mix imported by us from Japan. The crackers, which are
formed into interesting shapes and exciting flavors, reflect the difference made by using quality ingredients and carefulpreparation. They are a welcome addition to any social gathering.
Wasabi Powder
Very potent type of Japanese horseradish powder. Wasabi is mixed with water to form a very strongly flavored paste.Sushi Chef@ Wasabi is of the highest quality available from Japan, which is evidenced by its pungency and mild green
color. Wasabi can be used as a powerful condiment with many meat and fish dishes, as well as an addition to sauces and
marinades.
White Sesame Seed
A basic spice for oriental cooking, Sushi Chef@ Sesame Seeds have a delicate flavor and make an attractive and delicious
addition to a number of Japanese dishes. After roasting, they may be sprinkled on vegetables or salads, ground and
added to dipping sauces, or mixed into rice dishes.
Black Sesame Seed
Black Sesame Seeds are stronger in aroma and flavor than white seeds. After roasting, they add a sesame flavor and
color accent to rice, vegetables, and salad. They are also very interesting ingredient in bread baking.
Pickled Ginger
Pickled Ginger is a popular condiment consisting of thinly sliced young ginger roots pickled in a brine of rice vinegar and
sugar. It adds the crisp flavor of ginger to fish and vegetable dishes and is a tangy addition to stirfry dishes.
Wasabi Sauce
Wasabi Sauce is a delicious, creamy, pungent dressing made from Japanese green horseradish (Wasabi), lime juice and
other fine ingredients. It is an exciting new accompaniment to fish, meat, vegetables and eggs and is a zesty alternative to
mayonnaise.
Bamboo Rolling Mat & Paddle
The bamboo mat is used for rolling Nori (toasted seaweed sheets) around cooked and seasoned short grain rice in sushi
preparation. The paddle is used to stir rice and seasonings in sushi preparation, as well as a basic kitchen utensil.
Green Tea
We import this mild and delicate green tea from Japan. It complements and enhances the subtleties of Japanese food.
